Vegan Caribbean Tofu Pelau

Imagine a rice pilaf but with Caribbean flavours, and you have the answer to the question: What is pelau? Similar to dishes like jambalaya and paella, rice is cooked with vegetables, aromatics, and a protein. In this vegan version, that’s kidney beans, together with golden tofu. Finish with pineapple pieces for sweetness.

On top of food science and nutritional expertise, Lauren also designs some of the delicious (and nutritious) dishes on the menu each week. This nature-loving powerhouse has also taken the initiative to expand her daily duties to make the UCOOK experience even better for our home chefs, “I have recently become passionately involved in analysing dish data and meal success rates, in order to bring users even better meals with each passing week.” Lauren’s dish is unsurprisingly packed with all the goodness you need, and so much flavour (check it out!).
